Pseudo-Vichyssoise

It came to our attention that we had not enjoyed a delicious, creamy Vichyssoise (fancy for Leeks & Potato Soup) in a long time. Back in the day it had been one of our favorites and then it drifted away for no good reason at all. Except maybe our cholesterol, but who's counting?

We grate the potatoes...makes them cook faster.Once it was on our mind, with the outdoor thermometer steadily rising and an unoaked Chardonnay waiting in the fridge for the evening's repast, we knew its time had come.

...and we're simmering, simmering, simmering...Then we drifted from the recipe book because there was broccoli left in the garden and we try to be conscious of what's lurking to avoid waste. So while we started out making a classic Vichyssoise, it became something else. And boy, was it good. Pour!
