Oatmeal Raisin Cookies

It was an occasion demanding cookies, but as always, we try to do treats in a way that if it doesn't tone down the trash factor, at least it attempts to lift up the nutrition factor. So we played with an ordinary cookie recipe from the folks at Quaker Oats and replaced some of the white flour with whole wheat and oat flour, with excellent results.

It's a treat, though, so don't mistake this for Healthy Food.

Oatmeal Raisin Cookies, ready for the ovenBy the way, the dough can be tightly wrapped in parchment or wax paper, and stored in an air-tight container for days in the refrigerator or weeks in the freezer before baking. Handy!

Delicious in a lunchbox, delicious with a cup of tea, and goes without saying, delicious warm from the oven after a light meal, alongside a chilled glass of unoaked Chardonnay. Enjoy!
