Of course, it's true that this recipe is extra-perfect when accompanied by an unoaked Chardonnay for an evening's repast, but it's also spectacular when washed down with a real Southern sweet tea at lunchtime. Enjoy!

Dijon Chicken Salad

Half a bucket o' fried chicken leftover and you're looking for a way to dress it up before your fitness trainer shows up? This is the one.

Delicious on homemade bread, with crackers, in a pita, and certainly with an unoaked Chardonnay! From beginning to end, from hunting through the fridge, gathering the parts, washing the veggies, chopping, photographing, cleaning the counter, plating (small plate) to getting the Kindle and reading glasses from bedside before sitting down at the kitchen island for a solo lunch (with about 3 to 5 servings remaining), this light meal took less than 15 minutes to prepare.

Can't even chill a bottle of wine in 15 minutes without a dazzling quick-cool contraption. We don't have one.

Go to the recipe page and you'll notice a lack of salt. Doesn't need it. Between the mustard and basil (it really should have just a touch of fresh basil), and a bit of fresh lemon juice if it's available, and all the flavors from the ingredients, it just is one of those dishes that salt would ruin. And we all know, there aren't many of those.
