Broccoli Soup
Homemade soup is one of those things that just makes us happy. We'd like to say that we do every single thing from scratch, but we don't. We don't make our own chicken stock, for example, because we've done it enough to appreciate it as a convenience ingredient from the market.
But with that out of the way, pulling together a nutritious light or hearty meal is fast, easy, and leaves plenty of time for visiting and discussing the events of the day over a glass of unoaked Chardonnay.
Broccoli soup is probably our favorite, but most recipes are filled with fat, so we were excited to find one from the hard-working folks at Cook's Illustrated (April 2011) and gave it a try. Not so much fat or cream, true, but we thought it could use a boost. Using their tricks for keeping it green, we share with you our tricks for making it rich and satisfying. Enjoy!
