Waffles or Pancakes
Our favorite morning cake recipe originated from a King Arthur's Flour catalogue, but included ingredients not in our kitchen, so we improvised.
It has grown into this: we just don't buy cereal anymore. No need. If we aren't having slices of hearty homemade bread, we're having Overnight Oatmeal or this recipe, either as pancakes or waffles. (I'm a pancake person, but most of the people around me are waffle people, so whuddya gonna do?)
In our version we boost the healthy level by adding ground oats, which are just that -- ordinary rolled oats ground to a powder in the food processor. Good to keep on hand for all your baked goods. Sometimes we add flax meal to the dry ingredients, sometimes we forget. We almost always use some whole wheat flour, too.
For syrup? Nothing wrong with maple syrup, but you can stretch the budget by sauteeing fresh berries, orange juice and a little orange zest in some butter over medium heat in a small saucepan. Add real maple syrup (for goodness sakes, not flavored maple syrup, but the real stuff), heat and serve over your pancakes or waffles. Delicious!
